Dhyana's Kitcharee Recipe
Ingredients:
3/4 cup mung beans (yellow)
8 cups water
1 1/4 cup basmati rice
2/3 cup carrot (1/4 inch pieces)
1 cup butternut squash (1/2 inch cubes)
1/2 cup string beans ( in 1/2 inch pieces)
1/2 cup broccoli (in small flowerets)
1 small zucchini ( 1/2 inch cubes)
2 tbs ginger
2 tomatoes
2 1/2 tsp salt or to taste
1 tsp hing (asofiteda)
1 tsp cumin seeds
3 tsp coriander powder
1/2 tsp fenugreek seeds
2 tsp tumeric
1/4 cup ghee or for a vegan option you may use olive oil or sunflower oil
Directions:
- Place mung beans and carrots into water, bring to boil on high then reduce heat to a medium low, for about 20 minutes, until carrots and beans begin to soften
- Add rice and other veggies, cook until rice is almost done and vegetables begin to soften (about 15 minutes)
- In a small pan heat the oil or ghee, add the cumin seeds and fenugreek seeds until they are slightly golden, add the hing, tumeric and coriander powder for a few seconds until spices are fragrant (be careful the powders do not burn), add the ginger sauté for another few seconds, add tomatoes to spice pan until they soften, add the salt, add spice mixture into the pot with beans and rice and veggies and cook another 10 minutes or so, until everything is finished.
